deliciousness


this weekend i spent a night in GR with the ladies....and Drew. we had a good time making a delicious dinner that was inspired by one that liz and i had at Bonefish. although our main course was a salad, it was a hearty salad that fulfilled every craving i had in my stomach. this cobb salad is a mix that is a blend of warmth and fill, and citrusy and light. and it's so easy. the combination might not sound super appetizing, but believe me, it's good!

for the winter cobb salad you will need:

romaine lettuce
avocado
mandarin oranges (or dried cranberries)
chicken (we used a lemon pepper rotisserie from Meijer)
pine nuts (or cashews are good too)
blue cheese
citrus poppyseed vinegarette

all you do is cut up the lettuce and toss with small chunks of avacado, diced mandarin oranges, small pieces of chicken, nuts, top with blue cheese.

the dressing we used was an experiment that turned out great. it is approximately 
2/3 cup vegetable oil
1/4 cup apple cider (or red wine) vinegar
1/4 cup sugar
1/2 tsp salt
1/4 tsp dijon mustard
2 T poppyseeds
juice from 1/2 lemon and 1/2 lime

I love his eyes...they already say NAUGHTY don't they:). maybe thats why they think he is yours.... well the babes is sleeping but still needs to poop:) poor thing.enjoy your night at work.
