mango mongo

one of the best things about spring is seeing the green grass, budding trees, and with this comes fresh produce! i am so much looking forward to the farmer's market and the garden that i plan to help my sister out with.

sadly, my new favorite fruit will never be found at a farmer's market in holland, mi. However, i will count my blessings that Meijer can serve my needs and bring me sweet and juicy mangoes all the way from mexico (i know i'm not so much supporting the local market this way, but a girl's gotta do what a girl's gotta do).

don't know what to do with a mango? let me tell you. i love love mango smoothies!
so good and so healthy. all you do is put this stuff in a blender --

1. cut up the mango (there's a pit in the middle, so slice it lengthwise and the fruit will come away from the pit -- then remove skin)
2. add a half a banana
3. 1/2 a container of yogurt (i like to use peach)
4. add orange juice for a bit thinner consistency
5. add ice

sorry -- my recipes are never exact because you have to play around with it to figure out exactly how you like it :) you could always substitute the banana for a different fruit or use a different juice. depending on how you like it (more flavor, less flavor, drink it with a straw or eat it with a spoon) this will make 1-2 servings -- i consider one serving one mason jar full, because that's what i like to eat these out of.

buy some mangoes, make yourself a smoothie, sit in the sun, listen to some tristan prettyman, and trust me, life will look so much better.

buen provecha!
